Dairy Free Vegan Chocolate Truffles

These Dairy Free Vegan Chocolate Truffles are only 3 ingredients and are SO easy to make! So creamy you won't know they're gluten free and healthier!

Ingredients

  • 3/4 Cup Full fat canned coconut milk
  • 2 Tbsp Agave (or honey)*
  • 1 1/4 Cups Enjoy Life Foods Dark Chocolate Morsels (7 oz)
  • Cocoa powder, for rolling

Instructions

  • Stir together the coconut milk and honey in a large pot on medium heat, cooking it until it JUST begins to steam, make sure you don't let it boil.
  • Once steaming, remove from the heat and add in the dark chocolate morsels. Let them stand, without stirring, for 30 seconds. Then, whisk until the chocolate is smooth and melted.
  • Pour the mixture into a small bowl and lay a piece of saran wrap right over top of the chocolate. This prevents a skin from forming on top. Refrigerate until the chocolate is set, about 2-3 hours.
  • Once set, use a cookie scoop to from into balls and roll into cocoa powder (it'll be a bit messy!)
  • DEVOUR!**

Notes

*These are very dark chocolate, if you want them sweeter, use more honey, or use semi-sweet chocolate.
**Store truffles in an air-tight container in the fridge for about a week.
