Ingredients
For the apples:
2LargeApples,peeled and cored (I used Fuji)
3TbspCoconut sugar
1TbspAlmond flour
2tspTapioca starch
1tspCinnamon
1tspFresh lemon juice
For the topping:
1/2CupRolled, old fashioned oatmeal (GF if needed.) (45g)
1/3CupAlmond flour(34g)
1/4CupTapioca starch(30g) *
1/4CupSlivered almonds,roughly chopped (22g)
1/4CupCoconut sugar
Pinch of salt
3Tbsp + 1/2 tspCoconut oil,melted
Instructions
Preheat your oven to 350 degrees and rub a pie plate with coconut oil. Slice all the apples very thinly.
In a large bowl, stir together the apples and ALL of the apple ingredients and spread evenly into the prepared baking dish.
In a separate medium bowl, stir all the topping ingredients together, except the oil. Once mixed, add in the oil and use your hands to mix together until crumbly, leaving some large crumbs for texture.
Spread all over the top of the apples and bake until golden brown and the apples are soft and bubbly, about 50-60 minutes. Let cool for 10-20 minutes.
DEVOUR with dairy-free ice cream!
Notes
*You can PROBABLY change this for cornstarch. I have not tried it with this recipe, but have had success with other recipes!
