No Bake Energy Balls With Apricots and Cashews

These 3 ingredient apricot cashew no bake energy bites are a quick and easy, healthy snack for busy days! Gluten free and paleo and vegan friendly too!

Ingredients

  • 1/4 Cup Unsweetened coconut flakes (optional)
  • 1 Cup Roasted salted cashews (140g)
  • 2 Cups Dried apricots (300g)
  • 2 tsp Coconut oil, melted

Instructions

  • If using coconut flakes: preheat your oven to 350 degrees and spread the flakes on a baking sheet. Bake until golden brown, stirring occasionally, about 3-6 minutes. Watch them closely, as they burn quickly.
  • Place the cashews in a large food processor and process until crumbly and broken down. Add in the dried apricots and process until well mixed and the mixture begins to form a sticky dough.
  • With the food processor running, stream in the coconut oil. Process until it forms a ball.
  • Use a 1 Tbsp measure to scoop the ball and roll into bites*.  Roll in toasted coconut, if using, and place onto a parchment paper lined baking sheet.  Chill for an hour or so until they lose their stick, and then place into a container to store in the refrigerator.
  • DEVOUR as you need energy!

Notes

*If the dough is too sticky to roll right away, just chill it for 15-20 minutes in the refrigerator.  But, mine was fine right away!
