Oven Baked Mahi Mahi with Macadamia Crust

Ingredients

  • 1/2 Cup Roasted macadamia nuts, roughly chopped (60g)
  • 2 Fillets of Mahi Mahi (about 5 oz each)
  • 1/2 Tbsp Coconut oil, melted
  • Sea salt
  • Cilantro, for garnish

Instructions

  • Preheat oven to 450 degrees and line a baking sheet with parchment paper.
  • In a food processor, crush the macadamia nuts until they form small crumbs. This will just take a few seconds, don't over process or you will have macadamia nut butter. Spread the crumbs onto a plate.
  • Brush the Mahi Mahi fillets with melted coconut oil and press the top of each into the macadamia crumbs.  Really make sure to press the crumbs in, so they stick to the fish. Season with salt.
  • Place the fillets in the baking dish, nut side up, and bake for 7-9 minutes, or until the fish is white and flaky.
  • Turn your oven to HIGH broil and broil for 1-3 minutes, until the nuts have gone golden and toasty.
  • Garnish with cilantro and devour!

Notes

I served this over some cous cous that I mixed with a bit of diced cilantro, garlic powder, salt and some pineapple juice. It was amazing!
