5 Ingredient Pizza Bites
These easy, lighter pizza bites are SO simple to make and only use 5 ingredients! They're the perfect snack for after school that has all the pizza taste without all the work!
Servings 8 Servings
- 3 Small Roma tomatoes
- 1 Tbsp Extra-virgin olive oil
- 1 Tbsp Italian seasoning
- 3/4 tsp Garlic salt
- 1 Package The Laughing Cow® Creamy White Cheddar Flavor OR Creamy Mozzarella Sun-Dried Tomato & Basil Flavor Wedges, at room temperature (8 wedges total)
- 16 Large gluten free crackers of choice
- Fresh basil for garnish (optional)
Preheat your oven to 400 degrees and line a cookie sheet with parchment paper.
Cut each tomato into slices about 1/3 inch thick and place on the cookie sheet. Rub the tops with the olive oil.
In a small bowl, stir together the Italian seasoning and garlic salt. Sprinkle evenly over the tomatoes.
Bake until the tomatoes are tender, but not falling apart, about 12-13 minutes.
Place the wedges of The Laughing Cow into a medium bowl and lightly whip with a fork.
Spread the whipped cheese over the crackers, top each with a tomato slice and garnish with basil (if desired.)
