Avocado Fries with Granola Coconut Crust and Strawberry Yogurt Dip {Gluten free}

These quick and easy avocado fries are crusted in honey granola and brown sugar and served with a healthy strawberry Greek yogurt dip!

Ingredients

  • 1 Cup Gluten Free Granola I used Bobs Red Mill Honey Oat
  • 1/2 Cup Sweetened coconut flakes
  • 1/2 Cup Old fashioned rolled oatmeal
  • 1/4 Cup Brown sugar packed
  • 1/2 tsp Cinnamon
  • 3 Large Egg whites
  • 2 Large avocados
  • Cooking spray
  • For the dipping sauce:
  • 1/2 Cup Plain non-fat Greek yogurt
  • 1/2 Cup Strawberries roughly chopped
  • 1- 1 1/2 Tbsp Honey or maple syrup to taste (or sweetener of choice)

Instructions

  • Preheat your oven to 450 degrees and line a baking sheetwith parchment paper.
  • In asmall food processor, crush the granola just slightly so that it still remains a little chunky. Pour into a large plate and mix with the coconut flakes. Set aside.
  • Add the oats, brown sugar and cinnamon into the food processor and blend until the oats are fine and flour-like. Pour into a large plate.
  • Pour the egg whites into a separate bowl and cut the avocado into wedges (I got 4 wedges per each half of avocado)
  • Coat an avocado wedge in the oatmeal mixture and then in egg white. Finally, press the avocado into the crushed granola, really pressing and packing it on until it coats the avocado wedge. Place onto the prepared baking sheet Repeat for remaining wedges.
  • Spray the avocado fries with cooking spray and bake for 7 minutes. Flip and spray with a little more cooking spray, and bake until golden brown and crispy, about 3-5 minutes.
  • While the fries cook, blend the yogurt, strawberries, and sweetener in a food processor until creamy and smooth.
