Honey-glazed carrots with green tops and fresh parsley.

Ingredients

  • 2 cloves garlic
  • Small piece of fresh ginger
  • 1 tablespoon butter softened
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • Pinch of salt and black pepper
  • 1 pound baby carrots
  • Parsley chopped

Instructions

  • Preheat your oven to 425°F. Finely chop the garlic and ginger.

  • In a small mixing bowl, combine the butter, honey, garlic, ginger, and olive oil. Season with a pinch of salt and pepper.

  • Toss the baby carrots with the butter-honey mixture and place on a baking tray.

  • Roast the carrots for 15 minutes, flipping them halfway through. Transfer the caramelized carrots to a plate, and garnish with the chopped parsley.
