3lbsred-skinned potatoes, washed
¼cupolive oil
4clovesgarlicminced
1lemonzested

Instructions
Preheat the oven to 375°F.
Quarter your potatoes of they are large; half them if they are small. You will want them all the same size to ensure they cook consistently.
Toss the potatoes in a large bowl with olive oil, garlic, rosemary, lemon zest, salt, and pepper until they are completely coated.
Spread the coated potatoes on a baking sheet in a single layer and roast in the oven for 35-40 minutes or until soft inside and crispy on the outside.
Notes
If some of your potatoes are too firm, make sure they are in a single layer when you cook them and turn them at least twice during the cooking time. Also, compare the size of the potatoes; if they differ greatly, the bigger pieces won't be cooked all the way through.
