Ingredients

  • 2 lamb chops 1 lb
  • 2 tbsp mint chopped
  • 2 tbsp olive oil
  • 2 cloves garlic crushed
  • salt and pepper

Instructions

  • Make your marinade by combining the mint, olive oil, garlic, and a pinch of salt and pepper in a bowl.

  • Place the chops in the bowl and coat with the marinade.

  • Cover and place in the fridge for 30 minutes to overnight.

  • When you’re ready to cook your chops, preheat the oven to 400°F. Heat a cast-iron skillet on HIGH until piping hot and sear the chops on both sides.

  • Pour the rest of the marinade over the chops and place the skillet into the preheated oven for 2-4 minutes for medium-rare or 5-7 minutes for medium-well done.

  • Remove from the oven and the pan immediately, if you leave the chops in the pan they will overcook in the residual heat. Allow to rest for 5 minutes and then serve.

Notes

  • Browning meat is a really important way to add flavor to a meat dish. It has to do with the reaction of the proteins and sugars to high heat. It also gives the meat a crusty texture that I find appealing. So, no, it's not necessary to sear the chops but it's highly recommended.
  • To avoid dry chops, make sure your skillet for the browning part is piping hot. The meat needs to be seared and brown quickly on both sides so that there is no time for the juices to seep out of the meat. And also make sure your oven is fully heated before you put the chops in. last, wait a few minutes after taking the chops out of the oven before cutting into them. This will help them maintain their juices.
