Instant Pot Artichokes

- 2 Large artichokes
- 2 Cups water
- 1 Tbsp Garlic, minced
- 1 tsp Salt
- 1 Bunch parsley
Wash and dry your artichokes and then cut about 1 inch off the top to expose the inside.
Pull off any dry, dead leaves from the outside. Then, trim the other leaves (a scissor is easiest) by cutting the top tips of each leaf off.
Pour the water in your Instant Pot and stir in the garlic and salt.
Place the trivet inside and place the parsley inside, pushing it to the side. Then, place your artichoke hearts inside, cut side down.
Cover, set the "sealing" and cook at manual high pressure for 15 minutes. Let steam release naturally.
Use a knife to poke the bottom of the artichoke. If it goes in easily, it's done!
Dip in your favorite sauce and DEVOUR!
