Ingredients

  • 2 Cups All purpose flour (250g) (or GF 1:1 or white whole wheat flour)
  • 2 tsp Cinnamon
  • 1 tsp Salt
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Ground ginger
  • 1/4 tsp Ground nutmeg
  • 1/4 tsp Ground cloves
  • 1 1/2 Cups North Coast Organic Applesauce
  • 1/2 Cup Sugar
  • 1/4 Cup Avocado oil (or any neutral flavored oil)
  • 1/4 Cup Coconut or brown sugar
  • 2 Eggs
  • 1 tsp Vanilla
  • 1 Tbsp Raw organic cane sugar

Instructions

  • Heat oven to 400 degrees and grease a muffin pan
  • In a medium bowl, whisk the flour, spices, salt, baking powder and baking soda.
  • In a separate, large bowl whisk all the remaining ingredients except the raw sugar.
  • Add the dry ingredients into the wet and stir until just combined.
  • Scoop into the muffin pan (I like using an ice cream scoop) and sprinkle with the raw sugar.
  • Bake for 5 minutes. Then, reduce the heat to 350 degrees and bake another 13-15 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
