- 2 Cups All purpose flour (250g) (or GF 1:1 or white whole wheat flour)
- 2 tsp Cinnamon
- 1 tsp Salt
- 1 tsp Baking powder
- 1/2 tsp Baking soda
- 1/2 tsp Ground ginger
- 1/4 tsp Ground nutmeg
- 1/4 tsp Ground cloves
- 1 1/2 Cups North Coast Organic Applesauce
- 1/2 Cup Sugar
- 1/4 Cup Avocado oil (or any neutral flavored oil)
- 1/4 Cup Coconut or brown sugar
- 2 Eggs
- 1 tsp Vanilla
- 1 Tbsp Raw organic cane sugar
Heat oven to 400 degrees and grease a muffin pan
In a medium bowl, whisk the flour, spices, salt, baking powder and baking soda.
In a separate, large bowl whisk all the remaining ingredients except the raw sugar.
Add the dry ingredients into the wet and stir until just combined.
Scoop into the muffin pan (I like using an ice cream scoop) and sprinkle with the raw sugar.
Bake for 5 minutes. Then, reduce the heat to 350 degrees and bake another 13-15 minutes, or until a toothpick inserted in the center comes out clean.
Let cool in the pan for 10 minutes and then transfer to a wire rack to cool completely.
