Vegan Spinach Dip

This Vegan Spinach Dip doesn't have any cheese or dairy, but you'd never know! Deliciously creamy and dip-able; definitely a crowd pleaser!

Ingredients

  • 1 Tbsp Olive oil
  • 2 tsp Garlic, minced
  • 1/2 Cup Onion, diced
  • 12 Oz Dairy free cream cheese, softened to room temperature
  • 1/2 Cup Dairy free sour cream
  • 1/2 tsp Paprika
  • 1/2 tsp Salt
  • 24 Oz Frozen spinach, thawed
  • 1-2 Tbsp Nutritional yeast (optional - we liked it better without)

Instructions

  • In a large frying pan, heat the oil. Cook the onion and garlic until golden brown and the onions are soft, about 5 mins.
  • Transfer to a large bowl and mix in all remaining ingredients, except spinach.
  • Wring the water out of the spinach as much as you can (I like to put it in a thin kitchen towel and use that to wring out the water)
  • Mix the spinach into the dip.
  • Serve!

Notes

If you chill this dip and it gets too hard, you can try to thin it out with a few tbsp of plant milk
