Ingredients
1
Tbsp
Olive oil
2
tsp
Garlic,
minced
1/2
Cup
Onion,
diced
12
Oz
Dairy free cream cheese,
softened to room temperature
1/2
Cup
Dairy free sour cream
1/2
tsp
Paprika
1/2
tsp
Salt
24
Oz
Frozen spinach,
thawed
1-2
Tbsp
Nutritional yeast
(optional - we liked it better without)
Instructions
In a large frying pan, heat the oil. Cook the onion and garlic until golden brown and the onions are soft, about 5 mins.
Transfer to a large bowl and mix in all remaining ingredients, except spinach.
Wring the water out of the spinach as much as you can (I like to put it in a thin kitchen towel and use that to wring out the water)
Mix the spinach into the dip.
Serve!

Notes
If you chill this dip and it gets too hard, you can try to thin it out with a few tbsp of plant milk
