Ingredients

  • 2 tsp Olive oil
  • 1 Lb Baby spinach
  • 2 Tbsp Butter (Dairy free works)
  • 2/3 Cup Onion, diced
  • 2 tsp Garlic, minced
  • 4 Oz Full fat cream cheese (dairy free works too)
  • 1/2 Cup Unsweetened almond milk
  • 1/2 tsp Nutmeg
  • 1/2 tsp Salt

Instructions

  • Heat the oil in a VERY large pan on medium heat. Cook the spinach until nice and wilted and then transfer to a colander to drain.
  • Heat the butter on medium heat. Add in the onion and garlic and cook until golden brown, about 3 minutes.
  • Add in the cream cheese, almond milk, nutmeg and salt and whisk until the creamy cheese is smooth and melted. Cook, stirring frequently, until lightly thickened, but 2-3 minutes.
  • Squeeze out as much water from the spinach as possible and then stir it into the pan until well coated.
  • DEVOUR!
