2tspOlive oil
1LbBaby spinach
2TbspButter(Dairy free works)
2/3CupOnion,diced
2tspGarlic,minced
4OzFull fat cream cheese(dairy free works too)
1/2CupUnsweetened almond milk
1/2tspNutmeg
1/2tspSalt
Instructions
Heat the oil in a VERY large pan on medium heat. Cook the spinach until nice and wilted and then transfer to a colander to drain.
Heat the butter on medium heat. Add in the onion and garlic and cook until golden brown, about 3 minutes.
Add in the cream cheese, almond milk, nutmeg and salt and whisk until the creamy cheese is smooth and melted. Cook, stirring frequently, until lightly thickened, but 2-3 minutes.
Squeeze out as much water from the spinach as possible and then stir it into the pan until well coated.
