Earl Gray Breakfast Quinoa with Berries and Mint

This breakfast quinoa is scented with earl gray tea and topped with berries, honey and mint for a healthy, quick and easy breakfast that is super fresh!

Ingredients

  • 1 Cup Unsweetened Vanilla almond milk + additional for serving
  • 1/2 Cup Quinoa uncooked
  • 2 Earl Grey Tea Bags
  • 1 1/2 Tbsp Honey or to taste
  • 1/2 Cup DOLE Fresh strawberries roughly chopped
  • 1/2 Cup DOLE Fresh blueberries
  • 1/2 tsp Fresh mint very finely diced

Instructions

  • In a medium pot, bring the 1 cup of Almond milk to a boil. Once boiling, add in the quinoa and tea bags, stirring well. Turn the heat to low and cover the pot. Let cook until the milk is absorbed, about 15 minutes.
  • Once the quinoa is ready, remove the tea bags and mix in the honey.
  • Divide the quinoa between two bowls, and top with strawberries, blueberries and garnish with the fresh mint.
  • Pour additional almond milk over top and DEVOUR.
