Funfetti Breakfast Quinoa {High protein, GF + Super Simple}

This funfetti breakfast quinoa is quick, easy and tastes like a bowl of cake! The protein powder swirl makes it extra creamy AND healthy!

Ingredients

For the quinoa:

  • 2 Cups Unsweetened Vanilla almond milk + additional for serving
  • 1 Cup Quinoa uncooked
  • 1/4 Cup Truvia divided (or sweetener of choice, to taste)

For the protein frosting:

  • 1/2 Cup Vanilla protein powder
  • 3-4 Tbsp Unsweetened vanilla almond milk
  • Sprinkles

Instructions

  1. In a medium pot bring the 2 cups of almond milk to a boil. Once boiling, stir in the quinoa and 2 Tbsp of Truvia. Cover, reduce heat to low, and cook until most of the milk is absorbed, about 20-25 minutes.
  2. Once the quinoa is cooked stir in the remaining 2 Tbsp of Truvia* and divide the quinoa between 4 bowls.
  3. In a small bowl, stir together the vanilla protein and remaining almond milk until the consistency of frosting. *
  4. Dollop the “frosting” on the bowls of quinoa and cover with sprinkles.
  5. Pour a little bit of almond milk over top of each bowl and DEVOUR

Recipe Notes

Depending on how sweet your protein is, you may need less or more Truvia. So adjust to your preferences.
*the amount of milk you use will depend on your protein powder, and how thick it is.
