Zucchini Noodles Blueberry Basil Wrap With Honey Lime Yogurt

This quick and easy lunch wrap has zucchini noodles, creamy honey lime yogurt dressing and fresh blueberries. It's a protein-packed, healthy and portable lunch for only 200 calories!

Ingredients

  • 1 Small zucchini spiralized with the 3mm blade
  • Salt
  • 1/4 Cup Plain Non-fat Greek yogurt
  • 4 1/2 tsp Fresh lime juice about 1 small lime
  • 2 tsp Honey
  • 1 Cup Coleslaw Salad mix
  • 1/3 Cup Fresh blueberries
  • 2 Tbsp Red onion minced
  • 1 Tbsp Fresh basil thinly sliced
  • 1 Tbsp Jalapeno minced (about 1/2 a jalapeno)
  • 2 Flatout ProteinUP CarbDown Core12 Flatbread Wraps (gluten free version if needed)

Instructions

  1. Place the zucchini noodles into a colander set over a large bowl and sprinkle with a pinch of salt. Let them sit for 15-20 minutes, stirring occasionally, so they release their excess moisture.
  2. In a small bowl, stir together the yogurt, lime juice and honey. Set aside.
  3. In a medium bowl, stir together the coleslaw mix, blueberries, red onion, basil and jalapeno. Pour the Greek yogurt mixture over the salad mix until stir until evenly coated.
  4. Remove the zucchini noodles from the colander and REALLY squeeze out their excess moisture. Then, place them onto a layer of paper towels and, using a layer of paper towel on top, really press out as much moisture as you can. Put some muscle into it!
  5. Divide the zucchini noodles between the two flatbreads, followed by the coleslaw mixture.
  6. Roll up and DEVOUR!
