3Small Roma tomatoes
1TbspExtra-virgin olive oil
1TbspItalian seasoning
3/4tspGarlic salt
1Package The Laughing Cow® Creamy White Cheddar Flavor OR Creamy MozzarellaSun-Dried Tomato & Basil Flavor Wedges, at room temperature (8 wedges total)
16Large gluten free crackersof choice
Fresh basilfor garnish (optional)
Instructions
Preheat your oven to 400 degrees and line a cookie sheet with parchment paper.
Cut each tomato into slices about 1/3 inch thick and place on the cookie sheet. Rub the tops with the olive oil.
In a small bowl, stir together the Italian seasoning and garlic salt. Sprinkle evenly over the tomatoes.
Bake until the tomatoes are tender, but not falling apart, about 12-13 minutes.
Place the wedges of The Laughing Cow into a medium bowl and lightly whip with a fork.
Spread the whipped cheese over the crackers, top each with a tomato slice and garnish with basil (if desired.)
