This apple raisin easy gluten free stuffing is made from a mixture of bread and cinnamon raisin bagels! It's the perfect simple, healthy Thanksgiving side dish!

Ingredients
3TbspOlive oil
2CupsOniondiced (about 1 large onion)
2 1/2CupsApplediced (about 2 large apples)
1TbspFresh gingerminced
1TbspCinnamon
3inchUdis Cinnamon Raisin Bagelssliced into 1 cubes
7Slicesof Udi's Millet-Chia breadsliced into 1 inch cubes
1CupReduced Sodium chicken broth
2/3CupUnsweetened apple juice
3/4tspSalt
Instructions
Preheat your oven to 350 degrees and grease a large casserole dish.
In a large frying pan, heat the oil on medium/high heat.
Add in the onion and cook until soft and golden brown, about 3-4 minutes.
Add in the apple, ginger and cinnamon and cook just until the apple begins to soften, about 2 minutes.
Add the cooked apple mixture into a large casserole dish (mine was 9x13.) Add in the bagel and bread cubes and toss until evenly mixed.
Add in the chicken broth, apple juice and salt and gently mix (using our hands is the easiest) until the bread has absorbed the moisture.
Bake until the bread is cooked and the top is golden brown and slightly crispy, about 45-50 minutes.
