Creamy Healthy Carbonara with Sweet Potato Noodles
This Creamy Healthy Carbonara with Sweet Potato Noodles is a healthy, gluten free twist on the classic Spaghetti Carbonara recipe! Quick, easy and SO tasty!

- 4 Strips of bacon
- 12 Oz Sweet potato, spiralized with blade C
- 1 Large egg
- 2 Oz Goat Cheese 1/4 cup packed
- Chopped fresh parsley for garnish
Heat a large frying pan on medium heat and cook the bacon until
Transfer the cooked bacon to a paper towel to blot off the excess oil, and then cut it up into small strips. Leave the bacon grease in the pan.
Add the spiralized sweet potatoes to the pan and cook, stirring occasionally, until the potatoes just begin to wilt, about 8-10 minutes,
While the potatoes cook, whisk together the egg and goat cheese until creamy.
Once the potato noodles are tender, stir in the sliced bacon. Then quickly pour the cheese/egg mixture into the pan and stir until the mixture has slightly thickened and is evenly coating the potato noodles.
Season with salt and pepper and garnish with parsley
