In a large mixing bowl, whisk together the whole wheat flour, baking powder, and salt.
Create a well in the center of the dry ingredients and add the honey (or maple syrup), almond milk, eggs, and melted butter. Stir the mixture until just combined (don't overmix).
Preheat a non-stick griddle or skillet over medium heat and brush with butter.
For each bunny, pour the batter to form two large oval pancakes for the ears, one large round pancake for the head, and two smaller round pancakes for the feet. Use a spoon to help shape.
Cook the pancakes until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip the pancakes and cook for an additional 2 minutes or until golden brown.
Assemble the bunny on a plate by placing the two oval pancakes at the top for ears, the large round pancake below for the head, and the smaller round pancakes at the bottom for the feet.
Add Greek yogurt to the body pancake to represent the bunny's tail. Use sliced almonds for details.
