Ingredients

  • 1 lb Yukon gold potatoes cut into 1/2” to 3/4” pieces, skin-on
  • 1 ½ tablespoons extra virgin olive oil
  • ½ teaspoon fine sea salt or to taste
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper or to taste
  • Optional garnish: 1 tablespoon fresh chives finely chopped

Instructions

  • Begin by prepping your Yukon gold potatoes. Cut them into uniform bite-sized pieces, approximately 1/2” to 3/4” thick. You can keep the skin on.

  • In a mixing bowl, combine the potato pieces with extra virgin olive oil, sea salt, dried oregano, garlic powder, and black pepper. Make sure the potatoes are well-coated.

  • Arrange the seasoned potatoes in a single layer in the air fryer basket. Avoid overcrowding if you want them evenly crisped.

  • Set your air fryer to 400°F and cook the potatoes for 18-20 minutes. Toss the potatoes halfway through the cooking time.
  • The potatoes are ready once they turn golden brown (they need to be crispy on the outside and fork-tender on the inside). If you're using fresh chives, sprinkle them over the top before serving.
