- 2 medium overripe bananas mashed (about 1 cup)
- 1/3 cup natural peanut butter unsweetened
- 1/4 cup pure maple syrup
- 2 large eggs free-range preferred
- 1 tsp pure vanilla extract
- 2 cups almond flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp sea salt
- 1/2 cup dark chocolate chips
- optional: crushed peanuts and a sea salt for topping
Start by heating your oven to 350°F. Line a loaf pan with parchment paper or give it a light mist of nonstick spray.
In a large bowl, whisk together the mashed bananas, peanut butter, maple syrup, eggs, and vanilla until smooth
In another bowl, mix the almond flour, baking soda, cinnamon, and sea salt.
Pour the dry ingredients into the wet mixture, stirring until you have a uniform batter. It's important not to overmix.
Fold in the chocolate chips, distributing them evenly throughout the batter.
Transfer the batter to your prepared loaf pan. You can sprinkle the top with crushed peanuts, extra chocolate chips and sea salt.
Slide the pan into the oven and bake for about 45-50 minutes. It's done when a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
