Ingredients

  • 2 medium overripe bananas mashed (about 1 cup)
  • 1/3 cup natural peanut butter unsweetened
  • 1/4 cup pure maple syrup
  • 2 large eggs free-range preferred
  • 1 tsp pure vanilla extract
  • 2 cups almond flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1/2 cup dark chocolate chips
  • optional: crushed peanuts and a sea salt for topping

Instructions

  • Start by heating your oven to 350°F. Line a loaf pan with parchment paper or give it a light mist of nonstick spray.
  • In a large bowl, whisk together the mashed bananas, peanut butter, maple syrup, eggs, and vanilla until smooth

  • In another bowl, mix the almond flour, baking soda, cinnamon, and sea salt.

  • Pour the dry ingredients into the wet mixture, stirring until you have a uniform batter. It's important not to overmix.
  • Fold in the chocolate chips, distributing them evenly throughout the batter.
  • Transfer the batter to your prepared loaf pan. You can sprinkle the top with crushed peanuts, extra chocolate chips and sea salt.
  • Slide the pan into the oven and bake for about 45-50 minutes. It's done when a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
