Ingredients

  • 2 strips thick-cut bacon diced (optional for vegetarian)
  • 2 medium Yukon gold potatoes peeled and 1/2-inch diced (about 2 cups)
  • 8 large eggs
  • 3 tablespoons nonfat milk or milk of choice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup shredded Gruyère or similar melty cheese
  • 1 cup fresh spinach roughly chopped
  • 1/2 cup green onions finely chopped (about 3 medium)

Instructions

  • Preheat your oven to 350°F with a rack in the center position.
