1/4cupextra virgin olive oil
1tbspwhite wine vinegar
1tbspDijon mustard
1tspsaltmore for boiling water

2.5lb.red potatoescut into bite-sized pieces
1/2cupfinely chopped celery
1/3cupsliced scallions
1/3cupsliced chives
Instructions
In a large bowl, whisk together mayonnaise, olive oil, white wine vinegar, Dijon mustard, salt, and black pepper to create the dressing.
