Chipotle Sauce

Ingredients

  • 2 chipotle peppers in adobo sauce
  • 1 cup sour cream
  • ½ cup low-fat mayonnaise
  • 1 clove garlic
  • ½ lime juiced
  • 1 pinch salt

Instructions

  • Add the ingredients to your food processor.
  • Blend together. Scrape down the sides of the processor bowl occasionally to ensure all the dip is consistent. Continue blending until all the peppers have been blended smooth.
  • Pour the sauce into a jar or a serving bowl.

Notes

  • Start with one chipotle pepper instead of two to better control the degree of heat.
  • Always taste the sauce after blending and adjust seasoning accordingly.
  • For a thicker dip, add less lime juice. For a thinner consistency, blend in a splash of water or more lime.
