These buttery, melt in your mouth whipped shortbread are complete with a molasses glaze and are whole wheat too! Perfect for healthier Christmas baking!
Yea, yea, yea. More Molasses.
But, let’s be real, Molasses is like THE flavor of Christmas. I mean think of a ginger snap recipe? HELLO. Epitome of Christmas.
Can you just stop looking at me like that? I know you’re thinking that I am CLEARLY mistaken, and that Peppermint is THE flavour of Christmas, and you’re wishing these whipped shortbread cookies were really a slice of paleo mint gluten free chocolate cake.
But, for the sake of this post, can we just pretend that you’re totally NOT drinking a peppermint mocha right now, and that you’re drink a healthy ginger snap cookie steamer?
Is that even a thing? Don’tknow don’tcare
Sidenote: Â There might be a peppermint drink tomorrow though. Because I am the queen of opposing myself.
MOVING ON.
I am seriously as excited as I am tall (pretend I am a giant) to share these whipped shortbread with you BE-CA-UZ, whipped shortbread are my most favorite cookies EVER. Like, the kind of favorite that even beats a fresh-from-oven-gooey-slightly-underbaked-chocolate-chip-cookie.
When you’re making that kind of statement, you KNOW it ain’t messin’ around.
I could tell you some made up, adorable story about how, back in the Old country, I walked up hill BOTH WAYS, in the snow, WITH NO SHOES to my grandma’s house so that we could sip hot cocoa by a fire and make whipped shortbread cookies together at Christmas time.
But, that would be a lie.
Really, I just made these in the comfort of my modern home, with the electric fireplace on full blast. With my mom.
I mean, I love my mom. But Mom’s don’t make as good cookie stories as Grandma’s. You understand.
Anyway, the sequel.
Back to favorite cookie eatage.
I love whipped shortbread for about eleventy billion reasons, but here’s 2:
- They have -5 ingreidents (code for 6)
- They MELT IN YOUR MOUTH. It’s the epitome of taste-bud foolery. Because, for 1 second, they’re all WHOA YUM, and then the next minute it’s all WHOA, WHERE’S DA COOKIE?
Again, you understand.
The molasses glaze happened because, as mentioned yesterday, The Huberoni LOVES Ginger Snaps. So I wanted to include his taste bud-u-lar preferences.
Gold star wife points? I think yes.
I mean, you could TOTALLY make them without and still blow your taste buds brains off your tongue. But don’t. Because the glaze is one of those things that you kind of want to let drip all over your face, and roll around in it.
Maybe that’s just me though.
