Turkey Pumpkin Chili

Heat olive oil in a large pan on medium high heat. Add red bell pepper, onion, celery and garlic and cook until they begin to soften

Add another 1/2 Tbsp of olive oil and ground turkey to the pan. Cook until the turkey begins to brown

Add chili powder, paprika, pumpkin pie spice, cumin, cayenne, and cook until the turkey is no longer pink and the spices are fragrant

Add and combine chicken broth, fire roasted tomatoes, crushed tomatoes, beans, pumpkin puree , tomato paste, salt and pepper. Bring to a boil.

Once boiling, stir in the bay leaves and turn the heat to medium low. Cover the pan and simmer for 30 minutes

Once simmered, remove the bay leaves and stir in parsley. Season to taste with more salt
