Heat olive oil in a large skillet over medium-high heat. Add diced onion, bell pepper, and minced garlic, sauté until soft.

Add ground turkey and cook until no longer pink, breaking it into small pieces as it cooks. Drain excess liquid from skillet.

Stir in salsa, taco seasoning, and water. Bring to a boil, then reduce heat and simmer for about 10 minutes. Most of the liquid will be gone, and the mixture will thicken.
