Thai Pumpkin Curry

Heat coconut oil in a large pot on medium high heat. Once melted, add in carrots, onion and red pepper

Add in tomato paste, garlic, sugar, salt and ginger and cook until fragrant

Add in coconut milk, pumpkin and fish sauce and stir. Then, stir in cubed pumpkin and broccoli

Bring just to simmer on medium heat. Once simmering, reduce the heat to low, cover the pot and simmer 15- 20 minutes

Remove from the heat and stir in lime juice, water (if using) and cilantro
