Pumpkin Oatmeal Muffins

Preheat your oven to 400 and spray a muffin tin with cooking spray

Whisk together pumpkin puree, unsweetened almond milk, brown sugar, avocado oil, eggs, and vanilla

Add rolled old fashioned oats, cinnamon, baking soda, salt, nutmeg, ginger, and allspice and stir to combine

Scoop into the muffin cavities, filling them about 2/3 the way full

Bake for 5 minutes, then lower the heat to 350 and bake for anther 18-20 minutes

Let them cool completely in the pan, then DEVOUR!
