Heat the oil in a VERY large pan on medium heat. Cook the spinach until nice and wilted and then transfer to a colander to drain

Heat butter in a pot on medium heat. Add in onion and garlic and cook until golden brown, about 3 minutes.

Add in the cream cheese, almond milk, nutmeg and salt and whisk until the creamy cheese is smooth and melted. Cook, stirring frequently, until lightly thickened

Squeeze out as much water from the spinach as possible and then stir it into the pan until well coated
