Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5 minutes.

Add garlic and cook until fragrant, about 1 minute. Pour in chicken broth, ham, potatoes, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes
