Carrot Ginger Soup

Heat the oil on medium high in a large pot

Add carrot and onion and cook until lightly browned, about 6-7 minutes. Add ginger and cook another 2-3 minutes

Stir in vegetable broth, orange juice, salt, and fresh orange zest and bring to a boil

Once boiling, reduce the heat to low, cover and simmer until the carrots are fork tender

Let cool slightly and then transfer the soup to a blender and blend until smooth

Serve garnished with cilantro, if desired, and SLURP UP!
