This coconut milk smoothie is made with only 5 ingredients and is vegan friendly! It’s a quick and easy, 5 minute breakfast that is protein packed!

Remember when we ate those Vegan Red Lentil Curry bowls?
Well. We’re doing the vegan dance AGAIN.
Don’t picture the dance part though. I am not sure what it looks like.
And it might be scary.
How-EV-er, this time we’re doing vegan in the form of 5-minute-protein-packed-and-you-only-need-a-blender-which-means-almost-no-dishes-to-clean-up-YES.
And by all of that I mean: We’re making a PROTEIN SMOOTHIE.
A smoothie that only has 5 Ingredients and pretty much tastes like Spring AND Summer right in our mouth.
You know, strawberries and coconut. You understand.
Maybe.
But, to amp up the protein (you know I was going to sneak it in there SOMEHOWSOMEWAYALLTHETIME) I pimped this smoothie out vegan Ninja style: with some Classic Vanilla Sunwarrior Protein Powder!
Sunwarrior is my first experience with Vegan protein powder and, I can’t lie, I was a TEENSYTINSY bit nervous. What would protein made of RICE taste like? Would I like it? Would I feel like I was slurping on a rice bowl and cause my poor little taste buds all kind of confusion?
And the answer to last question was a resounding NO.
I knew as soon as I smelled it that it wasn’t going to throw the buds of taste into a tizzy. And I knew, THE SEQUEL, that I most definitely liked it when I did the taste dance.
Apparently this post is all about dancing. I guess that’s what happens when you stumble across something that is chock full of natural sugar, protein and is still DELICIOUS.
Aside from using Vegan protein for the first time, this was ALSO the first time that I have used dates IN a smoothie. You know I love using them in energy bites, but blended up?
I was unsure. Would it be chunky and weird? Would they just sink to the bottom and leave my poor mouth with a SURPRISE chew once I sip-sip-sipped my way through breakfast? <– and not a surprise in the good kinda way.
But, if this is what a smoothie that uses dates and vegan protein goodness is going to taste like, I foresee a lot of blenderized breakfasts in the future of my face.
And I suggest yours follows suit.

Ingredients
- 1 Scoop Sunwarrior Classic Vanilla Protein Powder
- 1 Cup Light coconut milk
- 5 Medjool dates pitted and roughly chopped
- 1/4 Cup Unsweetened Coconut flakes + additional for topping if desired
- 10 Large Frozen Strawberries
Instructions
- Place all ingredients into a]blenderand blend until smooth.
- Top with additional coconut flakes and DEVOUR.

ohh, I think I want to try that vegan protein powder out. as long as you say it’s not ewy. Have you had it just plain with milk/almond milk as a protein drink? Sometimes I do that for a quick after-the-gym drink so it’s gotta taste good!
Also, dates in smoothies?! brilliant for sweet-power! 🙂
