These Paleo Spaghetti Squash Bowls are mixed with cauliflower Alfredo sauce, bacon, avocado, tomato and topped with a fried egg. An easy, healthy meal!
I am a little bit nervous to talk (type?) to you today. Because I feel a sense of something in the air.
If I had to name it, I would call it “JUDGEMENT.”
As in “I am about to confess something MAJORLY life changing, and I think you will forever question my food-blogger prowess and never come visit me again.”
I’m trying to think of ways to continue to beat around the bush, but the POST MUST GO ON.
I have NEVER cooked bacon. LIKE. In the 24 YEARS that I have resided in my little place on planet earth, there has been no bacon-age doing its sizzle-age up in my kitchen.
BEFORE YOU THINK I AM TOTALLY CRAZY, let me tell you, I have EATEN IT. Just never cooked it.
HOW-EV-ER, I have also not eaten it in over 3 years. I was always afraid of the fat content, so I ate turkey bacon.
Until I decided to branch out and get my pork on last week.
That, you can judge me for. WHY DID I DEPRIVE MYSELF FOR ALL THOSE YEARS?! I feel like I have missed out on all things wonderful and delicious in the world.
And I did it to myself. WHO DOES THAT?
I feel a lot better now that I’ve got that off my chest. Can we still be friends? I hope you answered yes.
If not, I came prepared. I knew some of you wouldn’t just be all BEST FRIENDS FOREVER with me justsofast.
So, I did what you ALWAYS DO when in doubt of ANYTHING: I put an egg on it. A RUNNY YOLK kinda egg.
And, yes, when I say ANYTHING, I mean A-N-Y-T-H-I-N-G. Huberskerdo comes home from work and you aren’t sure if he’s had a bad day and if you should ask him about that thing that you’ve been meaning to ask him? PUT AN EGG ON HIS HEAD.
He’ll appreciate it, I promise.
BUT, you might not want to try that.
I might be lying.
You know there’s bacon. You know there’s oozy-drippy-how-are-you-so-good-on-all-DA-things egg, but there are other things that we have not discussed.
And it’s getting its creamy self all cozied up with spaghetti squash (<– LOW CARB NUMS) roasted in BACON FAT (<– Just straight up NUMS) and then tossed together with bacon, avocado and tomato.
So, kinda like a BLT (minus the “L” and the bread) in a good 4 U bowl of yumminess.
Side note: I asked The Hubonana if it needed “L.”
He threw a strip of bacon at my face.
Go forth and do the sandwich in the bowl dance and be happy about it.
Whatever that means to you.
