You can find me on the deck cooking up some keto marinated grilled chicken to serve up to my crew on any given Saturday night! Ingredients Needed
To cook up this mango salsa chicken recipe, you’ll need a variety of colorful and healthful fruits and veggies as well as some pantry items to bring out the best in your chicken! Let’s round up our ingredients and fire up the grill! Here’s what you will need:
- Fresh Lime Juice
- Green Tabasco
- Honey
- Olive Oil
- Boneless Skinless Chicken Breast
- Mangos
- Roma Tomatoes
- Avocado
- Red Bell Pepper, diced
- Cilantro
- Limes
- Salt
How to make Mango Salsa Chicken
Marinate
In a small bowl, add all the ingredients up to the chicken and whisk to combine. Add the chicken breasts to the marinade, cover, and pop the bowl in the fridge for at least 4 hours (overnight is best!)
Grill
Once the chicken has marinated for a while, fire up your grill and place the breasts on it when it’s heated up. Cook until they are no longer pink, flipping once halfway through. Place them on a plate, cover and let the chicken rest.
Make the Salsa
Combine all of the salsa ingredients and mix in a bowl until everything is well incorporated. Spoon it on top of the chicken, serve and DEVOUR!

Grilled Chicken with Mango Salsa FAQ
Although I used mango salsa for this grilled chicken recipe, you could easily swap out the mangos and use a different kind of tropical fruit instead- I would recommend diced pineapple or peaches!
First, slice your mango lengthwise downwards on either side of the seed. Try to slice the mango as close to the seed as possible, so as to not waste any of the fruit! Next, keep the mango in its peel and slice vertical lines across, followed by horizontal slices afterwards. The mango should now look like cubes, but still be attached to the peel. Next, turn the peel inside out and push the mango cubes into a bowl. You may need to use the back of a spoon, a spatula or a knife to help separate the fruit from the peel.

Ingredients
For the chicken
- 4 tsp Fresh lime juice
- 2 tsp Green tabasco
- 2 tsp Honey (omit for whole30)
- 2 tsp Olive oil
- 1 Lb Boneless skinless chicken breast, about 4 small breasts
For the salsa:
- 2 Large Mangos, diced
- 2 Large Roma tomato, diced
- 1 Avocado, diced
- 2/3 Cup Red bell pepper, diced
- 6 Tbsp Cilantro, minced
- Juice of 1-2 large limes, (depending how limey you like it)
- Salt, to taste
Instructions
- In a small bowl, whisk together all of the ingredients, up to the chicken
- Place the chicken breast into the bowl and stir around to coat in the marinade. Cover and refrigerate for at least 2 hours – to overnight (the longer the better!)
- Rub a grill with olive oil and heat to medium heat.
- Grill the chicken until no longer pink inside, about 10-12 minutes total, flipping once half way through. Then transfer to a plate and let rest 5 minutes.
- Combine all the ingredients for the mango salsa in a large bowl and mix well. Season to taste with salt.
- Top on the chicken.
