Today is the second installment of my IFBC recap! I’m keeping the word-age short and sweet today…because I’m sure you wanna get on with the good! Today I’m telling you the amazing stuff we ate – seriously, we ate GOOD that weekend. IFBC knows how to feed food bloggers brains AND bellies!
On Friday, the only event was the opening ceremony/registration. We had a TON of Bristol Bay Sockeye Salmon, and it was awesome! On the left: A mixture of salmon, cilantro corn, wasabi peas and some other yummies. Right: Salmon soaked in vodka. And something. But my brain got happy and tuned out after vodka 🙂

Saturday’s lunch was a Tuscan Buffet. Chicken Parm, and a BUNCH of different marinated vegetables/salads. Ah-may-zing.
Saturday night was the best. We had a huge tasting fair thing where all the sponsors let us try their products, and some local restaurants brought small plates for us to eat. Above: Fried chicken with kimchi waffles and bourbon maple syrup. SO GOOD and SO CUTE.
Yes, the most unappetizing photo EVAH. BUT, this was so good. Goat cheese stuffed cucumber with salmon on top. YUM.
So this was so different, but super tasty. In the cup is an heirloom tomato salad. The wedge is filled with some kind of sorbet. I was told it was tomato, but it tasted like raspberries. Either someone thinks i’m gullible or my taste buds are broken.
Delicioso Ahi Tuna poke in a crunchy thing. For being a food blogger, I’m really good at describing food right?
This was my favorite thing there. Yes, it’s just a slide and double yes it’s a terrible photo. BUT, it had crunchy onions, cheese and BBQ sauce on it and my face liked it. LOTS.
This was my SECOND favorite restaurant fare. BLT sushi! Yep, you read that right. That sushi was BACON JAM on top. I nearly died and went to heaven. I kind of want to eat my screen right now. Must scroll awayyyyyyy.
This was just darn pretty. It was tasty too, but I’m not hyooge on vegetal only sushi. This is vegetarian sushi that was soaked in beet juice. THE COLOR.
Okay guys. These nuts. O-M-G. I ate SO MANY. Top 3 favs: 1. Cardamom Cashews, Candied Pistachios and Cinnamon Pecans. Like I ate these over cupcakes. That good.
Another vegetal only sushi. Again, very tasty for being all veggies. I enjoyed all the avocado and what seemed to be salsa on top.
THIS CHEESE. We talked about extra aged goat cheese with the quinoa crusted chicken, but this was smoked extra aged goat cheese. And then I put it on a date and topped it with apricot chutney. And then I died and went to heaven. Again.
We also had THE BEST turkey slider of my life, but It was so good that I ate it before taking a picture of it.
And that, my friends, is why I went to the gym the next day.
