These Healthy Pumpkin Muffins are made without flour, and are quick, easy and great for on the go breakfasts or snacks!
We’ve been eating pumpkin blondies, pumpkin cake bars and even slow cooker roast beef with pumpkin and salsa!
So, are you sick of pumpkin yet?
Just FYI, because this recipe involves A LOT of it, the only answer to that question is “no. I ADORE pumpkin and I wish that Food Faith Fitness would change it’s name to Food Faith Fitness Pumpkin Forever And Always.”
Whoever said that there are no stupid questions, just stupid answers was clearly wrong.
The above question is stupid. Because it only has one answer that I will accept (I’m bossy) AND the answer is stupid because that blog name is a run on sentence.
We couldn’t have that. You know how perfect my grammatical skills are. WINK WINK NUDGE NUDGE.
Okay Taylor. Stop being creepy.
Because talking to myself during a blog post is TOTALLY from un-creeper-ville right? Wrong.
Ok. Moving on now.
So. Today. It’s an exciting day in FFF land BECAUZ (I’m getting more and more concerned about my spell check) I am partnering with A Sweet Life Diabetes Magazine to help promote diabetes awareness in November! Did you know November is Diabetes Awareness month? NOW YOU DO.
A bunch of awesome bloggers are coming together to help raise awareness for this disease, and we were asked to come up with some DELECTABLE (does anyone else find that word ICK?) recipes that have less than 10g of Net Carbs.
And, because my life revolves around Pinterest (SO FUN,) and that still seems to be ALL the rage right now, my brain screamed at me “PUMPKIN IS LOW CARB. DO IT.”
Now you see where I get my bossy from. It comes naturally.
I based these little healthy pumpkin muffins around the egg muffin recipe and Pumpkin Protein Bars that we ate last week. Mostly because I was still mad at the BAD FOOD dragon for ruining my recipe so many times, and I wanted to show him who wears the pajama pants around here.
Side note: I just decided to claim pajama pants as a business expense, because that is all I wear anymore. Is that so wrong? Please say no.
But then I wanted to give these healthy pumpkin muffins a little bit of JAZZ HANDS goodness (what?) so I covered them with cinnamon Truvia.
OH WHAT? You totally just saw me wiping muffin crumbs off my mouth? The JAZZ hands random-nosity was supposed to distract you.
Darn. Now I have to share. I was trying to stuff them all into my facial hole before you asked for one.
Because, these easy little snackies taste like pumpkin pie without all the general unhealthy and I-HATE-MAKING-PIE-CRUST qualities.
When something is that NUM, you just don’t share.

Cannot wait to try this deliciousness!! I am a BIG fan of cinnamon “sugar”…I put it on my ezekiel toast every morning, but use stevia instead. That was my secret when I was training for a bikini competition. I already have a can of pumpkin puree waiting for me in my cabinet 🙂 Thanks for this!
