They are also nutrient rich, so you really can’t go wrong with eating pumpkin, and your new favorite way to eat it will be in a thick slice of this easy paleo pumpkin bread!

Ingredients Needed
Baking up your own loaf of this tasty paleo pumpkin bread with coconut flour is super simple, and uses healthy ingredients to make. To make your own at home, you will need:
- Coconut Flour
- Pumpkin Pie Spice
- Baking Powder
- Salt
- Baking Soda
- Eggs
- Pure Maple Syrup
- Coconut Oil
- Canned PumpkinÂ
- Pecans
You could also be inspired by my almond flour pumpkin bread and add some chocolate chips!
How to make Paleo Pumpkin Bread with Coconut Flour
Prepare
Preheat your oven and line the bottom of a loaf pan with parchment paper, rubbing the sides well with oil.
Mix
In a medium bowl, add the flour, spice, baking powder, salt and baking soda and use a wire whisk to combine. In a larger bowl, add the eggs, coconut oil and maple syrup and beat with an electric hand mixer until well combined. Add in the pumpkin and beat the mixture again. Add in the dry ingredients to the wet and mix thoroughly to combine. Let the mixture sit for a bit so that the coconut flour can absorb some moisture.
Bake
Pour the batter into the prepared loaf pan and place the chopped pecans on top, gently pressing them in. Place the pan in the oven and bake until a toothpick comes out clean and the top is golden brown.
DEVOUR
Let the pumpkin bread cool COMPLETELY in the pan, then slice and enjoy!

Top Tips for making Paleo Pumpkin Bread Recipe
- Mix Well: For some loaf recipes, I recommend stirring until the batter is JUST mixed. However, for this pumpkin bread, it is important to mix everything thoroughly as coconut flour takes time to soak up moisture.
- Let is Sit: This goes along with the first tip in that coconut flour needs more time than many other flours to absorb moisture. It’s important to let your batter sit for about 10 minutes before pouring it into the loaf pan to bake.
How to serve Paleo Pumpkin Bread
I recommend serving this pumpkin bread in THICK slices, with whatever butter or nut butter you desire! I love some pecan butter on top, but you could go with cashew, almond or peanut butter and any of them would be delicious! You could also use grass fed butter or ghee as a topping, or even take it to the next level and make it into french toast!
How to store Pumpkin Bread
This pumpkin bread will last up to a week when stored, wrapped in plastic wrap tightly, in the fridge. To freeze it, I would suggest slicing it into portions, wrapping each slice individually in plastic wrap, and then placing them in a freezer style ziploc bag. Label them and they will last for up to 3 months in the freezer!

Ingredients
- 3/4 Cup + 1 Tbsp Coconut flour, sifted (70g)*
- 1 Tbsp Pumpkin pie spice
- 1 tsp Baking powder
- 1/2 tsp Salt
- 1/4 tsp Baking soda
- 4 Large eggs
- 1/3 Cup Pure maple syrup
- 2 Tbsp Coconut oil, melted
- 1 Cup Canned pumpkin
- 1/3 Cup Pecans, roughly chopped
Instructions
- Preheat your oven to 350 degrees and line the bottom of a loaf pan with parchment paper, rubbing the sides generously with coconut oil.
- In a medium bowl, whisk together the coconut flour, pumpkin pie spice, baking powder, salt and baking soda.
- In a separate large bowl beat together the eggs, maple syrup and coconut oil with an electric hand mixer until well mixed. Add in the pumpkin and beat until well combined.
- Whisk the dry ingredients into the wet until well combined. Let stand for 10 minutes so the coconut flour can absorb some moisture.
- Spread into the prepared pan and top with the pecans, lightly pressing them in. Bake until the top is brown and a toothpick inserted in the center comes out clean, about 1 hour to 1 hr 5 mins. Let cool COMPLETELY in the pan.
- Slice and DEVOUR!

I literally enjoyed pumpkin in the summer. I was mentally BORN for this season despite being physically born in the winter (though I ADORE snickerdoodle and peppermint hot chocolate flavors too!). I saw 3/4 cup but WHY did I put in 1 and 3/4 cups of flour? LOL. How did this happen? Is it just a rookie mistake? Anyway I used this recipe for the pumpkin bread and since it turned out so dry I just wet the ingredients more with water. I really wish I didn’t screw it up. I was really looking forward to eating the bread. ='( All the ads on this page is very distracting.

I subbed pure maple syrup for Lakanto’s monkfruit sweetened maple syrup and added 1/4 tsp. Kal Stevia powdered extract….the loaf turned out awesome. Thanks for the recipe…my new fave!

This is so tasty! Mine turned out a bit more dense than traditional pumpkin bread. I didn’t sift the flour so that could have been a factor. I love pumpkin bread all year round, and am always looking for ways to make it that are a healthier choice. This will be my new go to recipe.
