It is recipes like this that make me VERY VERY excited to be a food blogger on account of I got to test this recipe 5 times in 2 days just for the sake of making sure it was perfect.
But, both you and I know that it’s truly just because cheesecake is my most favorite dessert on this big blue and green swirly ball of air that we call Earth. Cannot even WAIT until Christmas when we bring back the sugar cookie Greek Yogurt Gluten Free Cheesecake and Chocolate No Bake Peppermint Cheesecake Cups.
But, it’s only August so let’s not get ahead of ourselves. Back to the low carb cheesecake recipe at hand.
FOCUS FOCUS FOCUS.
Is cheesecake low carb?
Typically, cheesecake is NOT low carb, since it’s sweetened with a A LOT of sugar. It has the MAKINGS of a low carb dessert with all that cream cheese, but the sugar prevents it from being so.
Except, HELLO ERYTHRITOL, you are perfect and sweet and powdery and SUGAR FREE which means you are making this easy sugar free no bake keto cheesecake recipe FIT THE BILLLLLL.
Side note: every time I type “erythritol” I have to Google it to make sure I am spelling it right. *PAUSE* Gonna go do that now.

You and I both know that I didn’t actually go Google. I went to my fridge and took a little cheesecake snack break. PRIORITIES YO.
What can I use instead of powered erythritol?
I have actually tried this recipe with granular erythritol and monkfruit and they just don’t work. They both work in the sense of taste, but the texture is grainy. If you don’t mind that, then you can use those options! OR, you can put granular erythritol in a high-powered blender and – POOF – homemade powered sugar free sweetener!
Is your mind blown by that discovery?
You could obviously use regular powdered sugar too, if you don’t care about carbs and sugar! YOUR FOOD, YOUR RULES.
How long does it take a cheesecake to set in the fridge?
A typical cheesecake takes AT LEAST 6 hours to set, but better overnight. But, because this EASY keto cheesecake doesn’t require baking, there are only 2 hours standing between you and your cheesecake-all-to-yourself-date.

Don’t you love days where you can write “eat cheesecake all by myself” on your “to-do” list and then cross it off in the SAME DAY?

On second thought, don’t answer that. I don’t want to expose the weirdness of my living-life-patterns.

At least that’s my goal.

Ingredients
For the crust:
- 1 1/2 Tbsp Almond flour, packed
- 1/2 tsp Powered Erythritol Sweetener (I used Swerve) *
- 1 tsp Ghee or butter, melted
For the cheesecake:
- 1/4 Cup Cream cheese, softened to room temperature
- 4-6 tsp Powered Erythritol Sweetener (to taste)
- 2 Tbsp 2% Plain Greek yogurt
- 1/4 tsp Vanilla extract
Instructions
- In a small bowl, stir together the almond flour and sweetener. Add in the ghee and stir until crumbly. Press into the bottom of a small ramekin.
- Using an electric hand mixer, beat the cream cheese and sweetener (taste as you go to sweeten to taste) in a medium bowl. Add in the Greek yogurt and vanilla and beat again until combined, stopping the scrape the sides as necessary. Taste again for sweetness.
- Spoon over the crust and spread out smoothly. Chill at least 2 hours to firm up the cream cheese.
- DEVOUR!

I added cacao powder to mine and sweetened it with maple syrup and swerve (which was not fine-textured so I dissolved it in warm water) and the texture isn’t exactly cheesecake-y but it is good enough for me!
