This Creamy Pumpkin Fettuccine is made healthy by using a secret ingredient – Tofu noodles! It’s quick, easy and gluten free too! Perfect for a weeknight meal!
The other day, I got in one those super-deep-think-about-my-life-and-all-that-it-has-been-and-ever-will-be kind of moods, and I started to think about all the things that stood out as being misconceptions.
- If I eat roasted carrots for breakfast, lunch and dinner, I will suddenly have 20/20 vision.
Yep. Still considered legally blind. Drat.
- If I lean the opposite direction that the plane feels like it’s about to barrel roll in, then it will magically straighten out and we will avoid possible doom and crashing and bad things.
Now, I haven’t been in a plane crash yet. HOW-EV-ER, it sure didn’t work out for those people on “LOST” amIright?
- Tofu. I don’t like it. Unless I’m at a sushi restaurant and it’s so deep fried and crispety crunchety that I can barely recognize it. OR in it’s a Rainbow Peanut Noodles Vegan Pasta Bake.
That all changed when I tried these Tofu Shirataki Noodles by House Foods.
Yes. You read that right. Noodles made out of Tofu…and a blend of flours made from an Asian yam.
And you know what? It also happens to be only 10 CALORIES a serving, gluten free, low carb, sugar and dairy free, vegan and Kosher.
!!!
The only thing that would make it more “super” is if you slapped a 6 pack and a cape on it.
You understand.
Did I mention that you can cook it 2 minutes? Not that you really needed any more reason to go all googley-eyed for this healthy, noodle-y YUM.
But, you know, just giving you ALL the facts.
This Creamy Pumpkin Fettuccine has only 6 ingredients. And by “6 ingredients” I mean “go look in your refrigerator because I bet you have them on hand RIGHT NOW which means you are only THEEEEESCLOSE to swimming around in a bowl of smooth, ooey-gooey cheesy, goodness tonight.”
I know you thought about swimming in it. Don’t lie.
And, realistically, when dinner is looking that good, I don’t blame you for wanting to get all up in its grill.
Your secret is safe with me.
Annnnnnd the rest of internet land. But, we can ignore that for now.
Things that we can’t ignore though?
Your rumbly, grumbly tummy. I can hear it from HERE.
Methinks that I forsee happy bellies filled with pumpkin, pasta goodness in the very near (like right now?) future.
