These energy bites are made from dates, dried cranberries and orange zest for a SUPER simple, high protein, healthy snack to boost your energy!
“What’s a date?” asked Mr. FFF.
“Umm, those things that we go on during the weekends where we eat food like Spicy Tuna Rolls (<3) at places other than our house?” Said me.
Him: “NO, I mean like the food thing”
Me: “Oh. It’s a fruit.”
Him: “So, you mean ‘it’s a plum?’”
Me: “No. It’s a date.”
Him: “So, it’s a grape”
Me: “No. It’s a date.”
Him: “But what was it BEFORE a date?”
Me: “A date.”

You can’t make this stuff up.
The Hubskerdoodle may be still left pondering the secret identity of a date (which doesn’t exist, but you pick your battles amIright?) but he was definitely not left wondering if they’re, well, Incr-EDIBLE.
See what I did there? Anyway.
I am seriously 100% head over the heels in love with dates and their soft and squishy (but in the good kinda way) texture and OHSOSWEET and healthy ways. I mean, have you tried making them into paleo brownies?
SO GOOD.
Confession time: I used to be one of those “food judge-y peeps” who wouldn’t eat anything that was “ugly” so dates were a MEGA nono in my books. They sort of look like little old, wrinkly people.
Except they don’t like people at all, but you understand my speak-age by now.
HOW-EV-ER, these (naturally!) sweetn’healthy fruits are also SUPER sticky, which makes them perfect for food-processer-izing (new verb?) with other equally nutrient-num-packed goodies and rolling them into little, pop-able, energy bites.
Not to mentioned chock full of healthy fats (Almonds and coconut oil REPRESENT) and protein. Because I can’t resist the urge to put protein powder in every.single.thing.
Like tomorrow’s recipe. FORESHADOWING.
To jazz up our bites, I threw in some dried cranberries and orange zest. They’re the fruity equivalent to peanut butter and jelly (remember the peanut butter oatmeal cookie cups?). THEY JUST WORK.
You know what also works? Or at least WANTS TO WORK?
Your food processor. I hear it trying to get out of the cabinet THROUGH DA SCREEN.
