
PIN Cranberry Paleo Gluten Free Almond Butter Cookies

Ingredients
- 1/4 cup creamy almond butter melted
- 1 cup coconut sugar
- 1 egg
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups almond flour plus 2 tablespoons, 5 1/2 ounces total
- 1 3/4 teaspoons baking powder
- 1/2 teaspoon sea salt
- 1/4 cup dried cranberries plus 2 tablespoons, roughly chopped
Instructions
- Preheat your oven to 350°F. In a large bowl, beat together the melted almond butter and coconut sugar using an electric hand mixer. Add in the egg along with the vanilla and beat until combined. Add the almond flour, baking powder and salt into the bowl and stir until well combined. Stir in the chopped cranberries. Line two cookie sheets with parchment paper, or a silpat. Roll the dough into lightly heaping Tablespoons and place onto the pan, pressing down slightly. Bake the cookies until the edges are just lightly golden brown, about 14-15 minutes. Note that they firm up A LOT once cooled. Let the cookies cool completely on the pan. DEVOUR

Hey Taylor, so I tried making these last night and after I added all of the ingredients together the consistency of the dough was really dry still so I kept adding oil from the almond butter or coconut butter. Unfortunately, adding those oils did not improve it much and the consistency was still too dry. I tried to still bake it but it just burned at the bottom. Do you have any recs or advice?

Hmmmmm that is odd, because I’ve made these many times with great success!
1. Did you weigh your flour to make sure it was exactly the right amount?
2. Coconut butter? The recipe definitely doesn’t call for that? That could definitely be the culprit.
3. What kind of almond butter are you using? Is it the no-stir kind or the one where the oil comes at the top and you mix it?

I almost never comment on blogs, but I have to let you know these cookies are amazing! I did sub smooth peanut butter because I didn’t have almond butter on hand but that was the only sub. The cookies were a perfect combo of crisp on the outside and chewy in the middle…something I have def found to be lacking in cookies since having to go GF. I will be making these cookies again for sure. Thank you!
ps I can also guarantee the cookies will be a hit with my son when he gets home from school! ????
