When something goes terribly and horribly wrong, what do you do?
Do you brush it off? Cry? Run around in circles?
I don’t know why I threw that last one in there, but if that’s your coping mechanism, I would LOVE to hear why.
Here are my steps: 1. Cry 2. Cry more 3. Cry and then whine. WHY ME, MY LIFE IS IN SHAMBLES OH MY GOSH. LIFE AS I KNOW IT IS COMPLETELY AND UTTERLY OVER.
Yep, that is exactly what happened when I made these gluten free cupcakes to celebrate FFF’s First Birthday.
You guys, I know this was AGES AGO but I never told you something. The day that I took those photos…I dropped my camera while taking an aerial shot.
Dropped my expensive camera right on top of a cute little cupcake. Splat.
“MY CAREER IS OVER. I HAVE NO MORE CAMERA. AND IT WAS TO CELEBRATE MY ONE YEAR BLOGIVERSARY. AND NOW I CAN’T EVEN HAVE A CAREER IN THAT. OH THE IRONY.”
That was my conversation. With myself.
Well, and Mr. FFF. But, he told me that I was being a “drama mama” and that life would go on.
Men, they don’t understand.
Two things that came out of that experience:
- I got a new camera and life was restored.
- After the incident I needed the comfiest of ALL the comfort foods that ever walked the face of the earth.
So, my brain birthed (does that sound awkward?) Rice Krispie Treats COMBINED with sugar cookies, COMBINED with chocolate, COMBINED with Almond butter. (You could even use your own homemade almond butter!)
My head just exploded from the yum factor guys.
Comforting kid food? Check. Cookies? Double check. Chocolate? Obvs. Check-er-oo. And Nut butter? (<3) Check Check Check!
I don’t really know if I need to ‘splain much else, but if that doesn’t draw you in like a moth to a light source (??) then….
Go back and read that list again.
I’m kidding. Sort of.
HOW-EV-ER, these Rice Krispie Treat bars are not only Nom Central, they are easy peasy lemon squeezy ( not like paleo lemon bars though. no actual lemons) central.
PLUS, they are really great for parties. I brought them to my Bible Study and everyone just went FACE PLANT. Gone in 60 seconds (not the movie.)
Sidenote: Bringing these to a party? GOOD IDEA
‘Cause you might (read:will) eat the WHOLE batch, in one sitting, if they sit on your counter.
Not that I did that.
But, if I did….it was for the sake of quality control.
