Internet friends. Everything in me <3 <3 <3’s everything about each and every nutty, chewy bite of this butter pecan cookie recipe. It reminds me of something that your Grandma would make, which means you can basically TASTE THE LOVE in EVERY BITE.

The outside of these brown sugar chewy butter pecan cookies bakes to the ULTIMATE golden brown, crispy goodness, while the inside is laced with flavorful notes of DEEP, rich molasses that keep it chewy and PERFECT.
Did you know that brown sugar helps baked good stay chewy because it has molasses in it? NOW YOU DO. <—That’s why the brown butter oatmeal cookies are SO chewy too!!
Which is why I cheated the system and used an EXTRA molasses punch to create the NIRVANA of cookie texture BLISS.
There IS always a method to my madness. I pinky swear.
How-EV-er, molasses is NOT the only super-secret-except-not-so-secret-anymore ingredient in this pecan cookies recipe.

Never mind. That is beside the point.
The point is that these BUTTERY shortbread-like gluten free pecan cookies are loaded with all the nutty flavor that your mouth craves at the promise of such a flavor combo.
First the ghee glides over your tongue in buttery-bliss, which is one up-ed by the golden brown, toasty-pecan flour cookie shell and – the big finale – a CRISPY-CRUNCH of ROASTY, TOASTY real pecans.
Texture: chewy, melt in your mouth, CRISPY.
Flavor: BUTTERY. RICH. TOASTY. GRANDMA LOVE.
And not the kind of Grandma love that usually ends in you receiving some heinous sweater when it’s TOO LATE to rock it at an ugly Christmas sweater party.
Don’t lie. The sweater she made you last year is totally going to make its debut at a party this year. I KNOW YOU.
Anyway. These vegan pecan cookies are basically a mish-mash of deliciousness that is like going on a taste bud vacation to the land of cookie MAGIC.
I don’t know where that it is, but I think we can all agree that we WANT TO GO THERE.

Ingredients
- 1/2 Cup Pecans
- 1/2 Cup Coconut sugar (or brown sugar)
- 1/2 Cup Ghee, softened to room temperature (or butter or vegan butter)
- 1 Tbsp Molasses
- 1 1/2 Cups Amoretti Natural Pecan Flour (158g)
- 6 Tbsp Coconut flour
- 1/4 tsp Salt
Instructions
- Preheat your oven to 350 degrees. Spread your pecans on a small baking sheet and bake until nutty smelling about 10-12 minutes. Roughly chop and set aside.
- Beat your coconut sugar with softened ghee for approximately 1 minute. Add 1 tbsp of molasses and beat until well combined.
- Add 1 1/2 cups of pecan flour, 6 Tbsp of coconut flour and 1/4 tsp of salt to the bowl and stir until well mixed. Fold in the chopped pecans.
- Drop by tablespoon sized balls onto a parchment paper covered cookie sheet and press out to about 1/2 inch.
- Bake until the edges of the cookies are golden brown and the top of the cookie is just set approximately 14 minutes.
- Let cool on the pan for 10 minutes then transfer to a wire rack to cool completely.

I would make pecan pie and use the flour in the crust. It would be a pecan overload but it would be delicious. I would also try making banana nut bread with the pecan flour and instead of putting walnuts in the batter I would put pecans. I think the flour would also make a great streusel topping. It actually seems like this flour can be very versatile.
