Did you know that it’s Brain Awareness Week?
Now, you may be very aware that my brain is sometimes (ok, a lot) jumbled and silly and non-sensical, but you know what?
My brain-u-lar device, is still ALL SORTS of healthy.
And you know why? (I’ll stop with the third degree soon, I promise)
I EAT BREAKFAST.
Remember yesterday’s quinoa energy bars and how we talked about the importance of eating that first meal o’ the day? Well, it’s breakfast quinoa time. Again.
Clearly, I am trying to get a point across here. ARE YOU PICKING UP WHAT I AM PUTTING DOWN?
Sorry for the CAPS. I just felt it was a necessity seeing as SKIPPING breakfast can actually lead to weight gain.
And you thought you were being a smarty pants and tricking your body into dropping those pounds because you were missin’ a meal.
PLUS (if you really need more reason to eat MORE FOOD) choosing the best foods at breakfast can help get your daily nutrients in. Which is why I bring you fresh fruits in the form of DOLE strawberries and blueberries, served over top of whole-grain, quinoa-licious goodness.
Which is cooked in Earl Gray Tea. Which means you can have your tea without having to mess with that annoying thermos that DRIPS ALL OVER YOU every time you pick it up on your commute to work. And then you have to look like a mess of a human, with your stained clothes, ALL DAY LONG at the office.
It’s happened to all of us. It’s ok. I won’t judge you.
Back to healthy-brain-fruity-goodness.
Do you know what I love about quinoa? Well, you’re about to.
It cooks SO FAST. Like, 15 minutes kinda fast. AND, it’s not one of those foods that you have to stand at the stove and WATCH to make sure you stir it approximately every 2.6 seconds so it doesn’t burn and cause the fire alarms to go off at 5am, and everyone in your apartment hates you.
I have no experience with that, just hypothetically speaking.
What I am trying to say is that you can make it WHILE you get ready for work. Set it and FURGET IT.
Well, until you eat it.
Once you top it with a squeezer-oo of honey, strawberries and blueberries (healthy, natural, sweetness? OH YA.) and sprinkle on that mint (HELLO FRESH!) Well.
You will definitely not be forgetting breakfast for ALL THE DAYS.
Earl Gray Breakfast Quinoa with Berries and Mint
- In a medium pot, bring the 1 cup of Almond milk to a boil. Once boiling, add in the quinoa and tea bags, stirring well. Turn the heat to low and cover the pot. Let cook until the milk is absorbed, about 15 minutes.
- Once the quinoa is ready, remove the tea bags and mix in the honey.
- Divide the quinoa between two bowls, and top with strawberries, blueberries and garnish with the fresh mint.
- Pour additional almond milk over top and DEVOUR.
