A quick and easy, dairy free, banana smoothie with a little bit of rum and caramel – just like the classic Bananas Foster Dessert!

I mean, last Friday was had an Ice Cream Cake with a Circus Animal Crust, and we had a Frozen Carrot Cake Cheesecake a few Friday’s back…and now we have a smoothie that, just like the banana vanilla orange smoothie, has frozen ‘naners in it.
So, it just makes sense right?
Except, considering some of ya’ll are still getting snowed on, you probably don’t want any more frozeny bits in your life. So, let’s just nix #frozenfridays.
If, I’m being totally honest I just don’t think my freezer can fit a new frozen recipe each week. But, let’s keep pretending that I’m not thinking of me here, and I’m really thinking of you in all of your frozen-things-are-falling-from-the-sky sadness kay? Awesome.
Instead of the cold part of this smoothie, let’s discuss the happy bits – like the fact that there’s rum. And it just so happens to be Friday. Are you seeing the connection?
I mean, it pretty much means that you HAVE to be consuming this at some point today.
IN FACT, A light bulb just turned on in my head. I have a great idea.
Why don’t all of you cold little monkeys (I don’t actually think you guys are monkeys, my fingers just started typing. Sorry) come all squish into my one spare bedroom here in sunny Florida, and we can drink Banana Foster Smoothies together poolside.

In fact, I should probably go and clean all the things if I’m expecting a couple thousand guests over any minute.
I should also make up a huge bowl of coconut whipped cream for our smoothie pool party.
You guys, that stuff is good. Have you ever made coconut whipped cream before? It is my life.
If you arrive here early I can’t confirm or deny that you will find me headfirst into the previously mentioned bowl of coconut whipped cream, probably still in my pajamas, and not even begun to clean my house.
You’ll understand.

Ingredients
- 2 Bananas sliced and frozen
- 1 Tbsp Rum
- 1 Tbsp Sugar
- 1/2 CupLight Coconut Milk
- Coconut Caramel Sauce {From HERE}
- Coconut milk whipped cream optional
- 1 13 oz canfull fat coconut milk
- 1/2 Tbsp Sugar
Instructions
- **If making the coconut whipped cream, place the can of full-fat coconut milk in the refrigerator overnight to chill**
- To make the whipped cream: Flip the can of chilled coconut milk upside down and then open it, drain the water and scoop out the cream. Don't discard the water - it's great to add to other smoothies!
- Transfer the coconut cream to a large bowl and add in 1/2 Tbsp sugar and beat, using an electric hand mixer, until light and fluffy. Place the bowl in the freezer until the smoothie is ready,
- Add the frozen bananas, rum, sugar and light coconut milk into a blenderand blend until smooth and well combined.
- Pour as much coconut caramel sauce as your heart desires along the sides of a very large glass, and pour in the smoothie.
- Top with coconut whipped cream and DEVOUR!
