This apple raisin easy gluten free stuffing is made from a mixture of bread and cinnamon raisin bagels! It’s the perfect simple, healthy Thanksgiving side dish!

Whiiiich is why I’ve been throwing cauliflower Alfredo vegan scalloped sweet potatoes, roasted Brussels sprouts, and paleo sweet potato casserole at you as of late. Aaaaand, there is more COMIN’!
Normally, I am VRY VRY down with a plate of lean-mean protein. But, on Thanksgiving?
I should be wearing a name tag that says “Hi my name is strechy-pants-give-all-the-sides-to-me-and-I’ll-make-a-meal-out-of-them Taylor.”

Truth be told: I LIVE for an easy gluten free stuffing. It is the MECCA, the ULTIMATE, and the NIRVANA of all Thanksgiving dishes on the table. The one that I go to first. And second. Maybe even third.
Unless there is some jalapeno stuffing from Vegetarian Mama. Then it’s a stuffing BATTLE!
A slice of paleo pecan pie? NO THANKS. Another serving of crispy-on-top-light-and-fluffy on the bottom pile of crunchy bread on my plate WILL DO.
In other news: did your stuffing have meat in it growing up? I recently learned this was a “thing” and I AM SO BEWILDERED BY IT. In my family, it was basically bread (<3 <3) veggies, chicken broth and a few spices.
That’s it. SIMPLE. YUMMY. COMFY-COZY INSIDE YOUR BELLY.
How-EV-ER, we’re moving ABOVE and beyond that recipe and adding a little fall-flavored pizazz to everyone’s most favorite side dish of life (except, still no meat. Still weirded out by that) by adding APPLES and using Udi’s Gluten Free cinnamon raisin BAGELS.
You remember the cauliflower Alfredo Lox bagel breakfast bowl where we turned Udi’s everything bagels into crunchy bites of crouton yumminess? That is what inspired this creation that is about to give you ALL the same feels in your mouth that you get when you wrap yourself in hand-knit sweater from GRANDMA.
SRSLY. The level of cozy-comfy-food goodness that is happening in this dish loaded with spicy-sweet, chewy chunks of bread? OUT OF CONTROL.

Using Udi’s super soft Millet-Chia Bread (secret superfood SAY WHAAA) adds that burst of tenderness that every good stuffing need. BUT THEN, your mouth gets to the bagels. They’re a little denser, a little chewier and just a littlebitmore crispy than the slices of bread.
Straight up: It’s gonna start a new multi-bread stuffing obsession inside your texture-freak heart.
The combination of cinnamon + raisins + apples is basically the epitome of fall-food BLISS inside your mouth. Sautéing the apples really brings out their natural sweetness which plays SUPER nice with that warm, ginger-y and spicy-cinnamon sensation that glides down the back of your mouth in the most feel-good kind of ways.
PLUS PLUS PLUS, some of the broth is replaced with a good soaking of APPLE JUICE, to really hit the “apple cinnamon” vibes OUT OF THE PARK.

Other Recipes You Might Like:
- 3 Tbsp Olive oil
- 2 Cups Onion diced (about 1 large onion)
- 2 1/2 Cups Apple diced (about 2 large apples)
- 1 Tbsp Fresh ginger minced
- 1 Tbsp Cinnamon
- 3 inch Udis Cinnamon Raisin Bagels sliced into 1 cubes
- 7 Slices of Udi's Millet-Chia bread sliced into 1 inch cubes
- 1 Cup Reduced Sodium chicken broth
- 2/3 Cup Unsweetened apple juice
- 3/4 tsp Salt
- Preheat your oven to 350 degrees and grease a large casserole dish.
- In a large frying pan, heat the oil on medium/high heat.
- Add in the onion and cook until soft and golden brown, about 3-4 minutes.
- Add in the apple, ginger and cinnamon and cook just until the apple begins to soften, about 2 minutes.
- Add the cooked apple mixture into a large casserole dish (mine was 9x13.) Add in the bagel and bread cubes and toss until evenly mixed.
- Add in the chicken broth, apple juice and salt and gently mix (using our hands is the easiest) until the bread has absorbed the moisture.
- Bake until the bread is cooked and the top is golden brown and slightly crispy, about 45-50 minutes.
