Place the dough in the bowl and turn it to ensure it is fully coated with oil. Cover the bowl with plastic wrap or a damp towel and allow it to rise in a warm area for 1 to 1 1/2 hours.

Drizzle the remaining olive oil over the dough and use your fingers to create deep dimples across its surface. Sprinkle with flaky sea salt and chopped rosemary if you like.
