Mix in 1 cup of bread flour. Then, add the olive oil and kosher salt. Gradually mix in 1 additional cup of flour. If the dough feels too wet, keep adding 1 tablespoon of flour at a time.
Lightly oil a bowl and place the dough in it. Cover with a clean towel and let it rise until doubled in size, about 1 hour. Transfer the dough to an oiled 8- or 9-inch round pan.
Preheat the oven to 400°F. Press your fingers into the dough to form dimples. Drizzle with a little olive oil, and then sprinkle with dried oregano, thyme, and parsley evenly over the surface.
